There are a lot of recipies around that include alcohol, oyster shots as example Smile .
I though a thread on this subject may be useful.

Here's a simple recipe next time you're out in the bush.

Bourbon Steak
1-1/2 pounds steak
1 teaspoon. sugar
1/4 cup bourbon
2 tablespoons soy sauce
2 tablespoons water
1 garlic clove, crushed
1 cup Apple Wood Chips
Mix all ingredients (except chips) together, place in ziplock bag and marinate
steak 4 hours or over night. Soak wood chips in water for 30 minutes, and
add to hot coals just before commencing to grill. Grill steak to desired
doneness. This recipe is good with any cut of steak you like.

The Apple Wood Chips I would consider to be an optional extra.

Here's another recipe about cooking with alcohol, I learnt this one on the Saturday night of our glasshouse trip.

1. Have a beer while thinking about what to cook for tea .

2. Have another beer because the first one tasted so good.

3. open yet another beer while waiting for the torrentous downpour to stop while you are sitting under a 2x2 metre tarp with five other people.

4. While now trying to avoid the lashing hail that gets you from every direction have a drink and think some more.

5. Drenched to the bone and still smarting from hailstone injuries start on the shots and just say " stuff cooking tonight"

This one is a little more complicated, but you could do a lot of the prep work before heading out.


BBQ Bourbon Prawns with Tomatillo Salsa

Ingredient:
40 green King Prawns
4 tbsp. Jack Daniels BBQ Sauce (See Recipe Below)
8 tbsp. Tomatillo Salsa (See Recipe Below)
4 tbsp Cilantro Lime Cream

Bourbon BBQ Sauce
12 oz wt. Dijon mustard
¾ cup Soy sauce
1 cup Jack Daniel's Bourbon
1/3 cup Worcestershire sauce
1.5 cup Brown sugar
2 cup Ketchup

Tomatillo Salsa
½ cup Tomatillo husked and dice ¼ inch
¼ cup tomato, red and yellow diced ¼ inch
2 tsp. Red onion cleaned and diced ¼ inch
½ tbsp Cilantro washed and chopped fine
1 tbsp Lime Juice
2 tsp Olive oil
½ tsp Jalapeño seeded and minced fine
Pinch Kosher salt

Cilantro Lime Cream
½ cup Sour Cream
2 tbsp Lime Juice
½ tbsp Cilantro washed and chopped fine

Creamy Parmesan Polenta
6 fl oz Chicken stock or broth
6 fl oz Heavy cream
½ tsp Black pepper
½ tsp Kosher salt
½ cup Polenta
1 oz Parmesan Cheese, grated

Instructions:
Season and grill the prawns until translucent. Place 1 tbsp of Bourbon BBQ Sauce on top to baste.
Remove the prawns to a serving platter and top with the tomatillo salsa and cilantro lime cream. Serve over creamy polenta.

Bourbon BBQ Sauce
Combine all ingredients and mix well. Store refrigerated until needed for use.
Before use heat in a saucepan and bring to a boil. (Caution: the
bourbon may produce a flame). Cook until the sauce thickens slightly.

Tomatillo Salsa
Combine all ingredients and mix well. Store refrigerated for at least 1 hour until needed for use.

Cilantro Lime Cream
Combine all ingredients and mix well. Store refrigerated for at least 1 hour until needed for use.

Creamy Parmesan Polenta
In a heavy saucepan combine the chicken broth and cream and bring the
liquid to a boil. Add the salt and pepper then whisk in the polenta.
Cook over low heat until the polenta grains are soft and the liquid is
absorbed. Fold in the Parmesan cheese and serve.

OMG, that's like about 3 steps too many than I can be bothered with. Perhaps I can buy the sauces pre-made? LOL

What are apple wood chips? Are they like apple scented wood chips like when you're flavouring meet in a webber you can chuck in special wood chips designed to flavour the food?

I believe so, though if you're cooking over a fire these wood chip would be a waste.
